Agrifood Management & Innovation Lab focuses on four research trajectories:

The digitalization of the food industry

This research line aims at a systematic collection and analysis of empirical evidence on the adoption and use of digital technologies in agri-food SMEs’ strategies, marketing, operations. Research in this area aims at contributing to current to the scholarly and to the practice-oriented debates on the determinants and implications of digital technologies on agri-food SMEs strategies.

Analysis of consumer behavior in markets for food

This research line aims at contributing to the updated mapping of the current and emerging patterns of consumption in national and international markets.

Business model evolution and innovation in the agri-food industry

The research line aims at detecting and modeling the evolution of business models adopted and developed by firms in the agri-food industry. In particular, it aims at understanding the interplay between business model innovation as a response to changes in consumer behaviour, to the blurring of industry boundaries due to the diffusion of novel technologies, to internationalization.

Entrepreneurship in food and wine industries

This research line aims at contributing to the understanding of the dynamics underpinning new venture creation in the agri-food industry and in complementary industries. Systematic analyses of food and wine start-ups as well as new ventures in machinery and food-related services, will allow the research team to shed light on the entrepreneurial processes and the importance of the entrepreneurial function for the evolution of the industry. Research activities started from a systematic analysis of female entrepreneurship in the wine industry.

Education and training

Master in Food and Wine: promoting the excellence of Made in Italy

The Agrifood Management and Innovation Lab, in cooperation with Challenge School – Ca’ Foscari University of Venice, promotes the Food and Wine Master. Started in 2005, the Master is a consolidated and highly recognized executive program at Ca’ Foscari University. It aims at equipping young aspiring professionals and entrepreneurs in the agri-food industry with up-to-date knowledge and competences instrumental to valorize the excellence of Made in Italy food and Wine and to manage innovative companies in the industry.

Classes are held by academics, highly recognized and experienced professionals, national and international experts and opinion leaders, in a mix of traditional lectures, workshops, team projects and real-life cases.

Professional profiles developed by the master will be employed in firms, organizations and public entities in the agri-food industry in the following positions/functions:

  • Marketing manager/communication manager
  • Expert in the promotion of made in Italy food in international markets
  • Consultant/advisor for firms and institutions on issues related to the defense and valorization of typical italian food and wine
  • Event manager
  • Hospitality manager

Other programs

Experior project

In cooperation with Pasta Fracasso, students in the Masters program in marketing and communication at the Department of Management of Ca’ Foscari University of Venice. Experior project are experiential, problem/project-based add-ons to curricular courses being taught in the program where project teams composed by students answer with innovative solutions to challenges proposed by partner companies. Pasta Fracasso has challenged students of two different classes: Agrifood Marketing (Prof. Christine Mauracher) and Communication and digital marketing (Professors Francesca Checchinato and Cinzia Colapinto).

Food strategy and innovation

2023 Edition: Twin Transition

In light of the results from the two previous editions, this third survey focuses on the twin transition: digital and green transformation.

With the aim of understanding the interconnections between these two transitions, which many companies are beginning to experience, we investigated not only the activities of the companies in our sample but also the role of the players they interact with.

The research methodology is based on three main activities:

  1. Desk analysis of the online presence of companies (websites and profiles on major social networks) and sustainability communication on their websites;
  2. A questionnaire administered to a sample of companies to explore technologies in use, sustainability activities, and the impact of the twin transition;
  3. In-depth interviews to understand the motivations and dynamics behind corporate behaviors.

2022 Edition

The research project is part of the activities of the Food strategy and Innovation Observatory and aims to analyse the development of the sector, broadening its range of investigation compared to the first edition, which had focused mainly on the analysis of the digital activities of Triveneto companies.

As of this year, in fact, in addition to an update on the digital situation, the observatory will look at the broader concept of innovation, thus we will examine both digitalisation and sustainability.

The objectives of the ‘Food strategy and Innovation Observatory’, which analyses medium-sized companies in the food sector in the Triveneto region, are:

  • Measure the spread of digital, with particular attention to its use in communication, promotion and distribution;
  • Identify the determinants of digital maturity;
  • Identify the actions undertaken and projects that will be developed in the field of sustainability
  • Reconstruct the decision-making processes and the organisational and sector determinants underlying the different profiles of digital adoption and sustainability in the company.

The team is involved in three main activities:

  • A desk analysis of the digital presence of a sample of over 500 companies from the main food supply chains;
  • A survey of a sub-sample of 100 companies aimed at identifying the decision-making processes and factors that determine the adoption of digital tools;
  • In-depth interviews with the most and less digitally ‘mature’ companies in order to reconstruct benchmarks and to identify barriers

2021 Edition – Digital marketing and food

The observatory aims at systematically providing with an updated measure of the digital marketing maturity of small and medium sized (10 to 250 employees) agri-food firms in the three region of the North East of Italy (Veneto, Friuli-Venezia Giulia, Trentino-Alto Adige).

The study investigates on the digital presence of firms through:

– an extensive collection of online data (website and social networks); 

– a survey administered to marketing managers aimed at understanding their objectives and ways of managing online marketing presence;  

– an in-depth analysis of selected case studies aimed at capturing the processes underlying firms digital marketing maturity.
